Perfectly pure, full of flavor, and rich in minerals – that's the salt from the salt pans in the Kampot province of Cambodia. The tradition of harvesting sea salt in this region runs as deep as the cultivation of pepper. The conditions are ideal here, with intense sunlight, an ocean breeze, and a friendly climate that has attracted salt pan establishments and salt extraction from the ocean for hundreds of years. In terms of quality, this salt can be compared to sea salt from the most renowned regions in France or Portugal.

The process of obtaining coarse sea salt is a labor-intensive and time-honored tradition that has remained virtually unchanged for centuries. It begins with the crystallization of salt on the surface of special pools known as salt pans, where ocean water is allowed to flow and evaporate under the influence of the sun and wind. As the water slowly evaporates, salt crystals form on the surface.

These salt crystals are then meticulously collected by hand, without the use of any machinery, using long wooden rakes. This manual collection process helps maintain the consistent structure and purity of the salt, ensuring it remains of the highest quality.

Similar to the cultivation of pepper in Kampot, individual small-scale farms are responsible for the collection and processing of sea salt. These farming families have passed down the tradition of sea salt production from generation to generation. As a result, the salt is of the utmost bio quality, requiring no further refinement. Just like with pepper, we purchase salt directly from these farmers to ensure they receive fair compensation for their hard work.

When the sun beats down on the salt pans in Kampot, it causes delicate salt crystals known as "salt flowers" (fleur de sel) to bloom on the surface of the water. These are fragile salt crystals formed by the rapid evaporation of water.

These crystals are so fine that they can be easily crushed between your fingertips. Their delicate structure corresponds to the subtleness of their flavor, which is not as pronounced as coarse salt. Nevertheless, the flavor profile is similar, thanks to the presence of 70 types of minerals and trace elements that are beneficial for our health.

Thanks to its delicacy and texture, the Kampot salt is primarily used as a final touch to a prepared dish. It certainly doesn't belong in a salt grinder; all you need to do is crush it lightly between your fingers and sprinkle the delicate crystals on the surface. They dissolve quickly and perfectly enhance the flavor of the dish. Moreover, if you apply the salt just before serving, it creates an amazingly crystalline effect on both savory and sweet dishes.

We package Kampot salt in glass jars, and also in 100g Doypack pouches. Thanks to the materials used and the special technology for sealing the bags, air and moisture are kept out of the salt. This allows the salt to maintain its authentic taste and aroma even after opening the packaging.
