Kampot pepper is grown in Kampot province, located in the very south of Southeast Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the the highest quality in the world. It is no coincidence that this pepper has earned a protected geographical indication, much like French champagne.

Characteristic

White pepper is a gentle, yet persistently peppery caress of the taste buds.

After it is ground, they unfold on the nose of camphor, sage, and cedarwood, accompanied by the delicate aroma of musk flower, of grapefruit and other citrus fruits. After a few minutes in the mouth, you can detect notes of nutmeg, of thyme flower and lemon balm underpinned by the aroma of cedar and black tea.

Processing

White pepper is a specialty that is obtained from fully ripe red peppercorns.

They are subsequently dried on direct sunlightand soaked again, to make it possible to remove the red skin, leaving only a creamy white peppercorn.

Thanks to the careful selection corresponding to the strict quality standards for Kampot-exported pepper, as set by the Kampot Pepper Association, only the best peppercorns are hand-picked. They are then vacuum-packed to ensure that the quality and freshness during the journey to the Czech Republic, where they are further sorted, packed, and delivered right to your table.

Usage

Thanks to the different flavors, aromas, and pungency, the various types of pepper are suitable for different purposes. White pepper goes well with light meat.

It superbly enhances the flavor of seafood, it pairs well with risotto, creamy soups and its flavor is not lost even when combined with a good paste. The more finely you crush Kampot pepper, the more intense the pungency will be, on the contrary, larger fragments or whole grains impart more distinctive pepper tones to the dish.
