Proč je Kampotský pepř lepší než běžné pepře z obchodu?

Blog

Why is Kampot pepper better than regular store-bought pepper?

When you taste Kampot pepper, you immediately notice the difference. Its full flavor, intense aroma, and long-lasting aftertaste rank it among the best peppers in the world. But what makes it so exceptional? Let's look at the key factors that make this pepper so unique and compare them to how pepper is usually grown in mass production. 1. Cultivated in ideal conditionsThe Kampot region in Cambodia has a unique microclimate, rich soil, and optimal rainfall. These conditions allow the pepper to develop a complex aroma and full flavor.Mass production: pepper is not always grown in ideal conditions, often on plantations with degraded soil where artificial fertilizers are used to achieve higher yields, which affects taste and quality.2. Traditional hand harvestingEach peppercorn is handpicked at optimal ripeness—one berry at a time! This ensures that only the best pieces are selected—each berry is further inspected.Mass production: common pepper is often harvested mechanically, which means unripe, overripe, and damaged berries are mixed together, negatively affecting the final taste. 3. 100% natural processingKampot pepper is sun-dried without chemical treatments.Mass production: industrial peppers are often chemically treated for faster drying and longer shelf life—which can negatively affect their taste and natural aromatic profile.4. Long maturation and fermentation timeThe long ripening of Kampot pepper allows for a deeper development of flavors. For example, red pepper, which is harvested fully ripe, has milder and fruitier tones.Mass production: pepper is often harvested prematurely to speed up processing and increase yields. This leads to less developed flavors and weaker aroma.5. Fair trade and direct cooperation with farmers.pepper..field works directly with family-owned original farmers, ensuring fair compensation, sustainable conditions, and direct purchase. Fresh pepper directly from the farm is thus on your table within days or weeks.Mass production: commercial pepper often comes from anonymous suppliers who receive low purchase prices and are forced to cut costs—and thus the quality of the product. The resulting pepper then travels through several middlemen to its destination, sometimes taking several months.6. Intense aroma and flavor experienceKampot pepper has floral, fruity, and spicy tones that gradually and longly unfold on the tongue.Mass production: common pepper often tastes simply hot because it doesn't have enough time to develop rich flavor nuances. That is why you might not even like regular pepper—it simply lacks flavor. 7. Exclusivity and Certified QualityKampot pepper is protected by a geographical indication (PGI), which guarantees its authenticity and quality. It is something like genuine Champagne.Mass production: industrially produced peppers do not have this certification, which means they may contain blends from different regions without guaranteed quality.Kampot pepper from .pepper..field is simply synonymous with honest flavor and premium quality. Every dish you prepare with it gains a new dimension of taste – just try it once and you won't want to go back to regular pepper!

Forbes: Spicy firsts. Czechs are the largest exporters of Kampot pepper in the world

In just five years, we have managed to become the largest exporter of Kampot pepper. Worldwide! In numbers, this means that out of 110 tons of Kampot pepper exported annually from Cambodia, 40 tons are accounted for by us. And we are also newly in the leadership of the local association, which oversees all matters related to the cultivation and export of Kampot pepper. “This year we are focusing on France, Germany, but also the Nordic countries, mostly Denmark,” describes Klára Dohnalová, co-founder of our project, in the article. CzechCrunch: It took five years and Czech Steam became the largest exporters of Kampot pepper in the world

We started the .pepper..field project with a few hundred kilograms of pepper exported from Cambodia. Today, it is tens of tons, and we want to break through with it worldwide. At the same time, our representatives in Cambodia have managed to get into the leadership of the local Kampot Pepper Association (KPPA).  “The global body not only oversees the authenticity control of Kampot pepper but also the proper functioning of processes between farmers, companies in Cambodia, and target markets. Due to this year’s poor harvest, some farmers and pepper companies started cheating, and this is also one of the responsibilities within KPPA – to allow only Kampot pepper that is genuine and of one hundred percent required quality to cross borders from individual entities,” explains Klára Dohnalová, co-founder of our project, in the article. "Happy birthday, dear .pepper..fielde!" We are already celebrating the 5th birthday

This year we celebrate 5 years since we founded the .pepper..field project. And even though some people may not like self-praise, today it made us happy. Our colleague Aleš wrote us a birthday email that warmed our hearts and at the same time somehow summarizes the last few years we have experienced together. Happy birthday, .pepper..field! 5 years. I have been with you for so long and I love everything you do. Well, now we do it together. :-) When you were looking back in 2018 for "Christmas cabinets for our sales booth in Smíchov," something told me to immediately write to Klára and David, you want this! And also, yes. Even though in the first years I only helped out occasionally at festivals, I never felt like it was a company or something cumbersome, but just friends and family collaboration. That has remained until today. Despite all the night shifts, demanding foreign trade fairs, or my first trip to Cambodia. But what would I... after all, you were there with me. Thank you very much and I wish you and our project not only great things but also the occasional stumble here and there, because they always just made us stronger. Although I am looking forward to January and a bit of peace when you are back at the farm... Happy birthday and just keep it coming! I appreciate you, your effort, weekend messages (less now, but still), actually everything you do. Both for us, your colleagues and friends, as well as business partners, customers, and of course those 2,000 amazing souls in Kampot.

How did you like the spicy episode of MasterChef Czech Republic?

Did you watch the next episode of the MasterChef Czech Republic show? On Wednesday, November 22, you could see it on Voyo, while on TV Nova only on November 29. The six amateur cooks faced another challenge and also eliminations. What was the theme of this episode? How did the contestants deal with the challenge? Which of  our peppers do the judges and contestants prefer the most? Did it help anyone win? Were their final plates beautiful? And who received an ugly verdict? But it wouldn't be the  MasterChef kitchen if the judges - Radek Kašpárek, Jan Punčochář, and Přemek Forejt - didn't arrange a nicely spicy twist… What do you think the contestants were prepared for? Watch it now on  Voyo , or look forward to it next week, on Wednesday, November 29, on TV Nova at 8:20 PM.  What do this year's contestants and chef and judge Jan Punčochář say about cooking with the world's best pepper? “We like your pepper and it works well for us, especially the lyophilized one!”Jan Punčochář, chef, MasterChef judge “I use your pepper in almost everything, for example, the fermented one is perfect!”Tereza Vyhlídalová, MasterChef 2023 finalist “I love pepper, who doesn't?! I use pepper in almost every dish, my favorite is definitely white pepper; I love it for its delicacy and intensity! I use it a lot in my favorite Asian soups.”Adam Rundus, MasterChef 2023 finalist “Because I care about quality ingredients, I know .pepper..field well and I don't cook at home with anything else, because it has absolutely no competition when it comes to taste and intensity.”Petra Kamencová, MasterChef 2023 finalist

The spiciest night of the year – 6 hours, 120 guests, over 200 kg of Kampot pepper

Do you remember what you were doing on September 14, 2023? We won't just forget it easily. For our customers, we prepared Night Shopping on the e-shop – a night full of discounts and benefits that we launch twice a year. Additionally, we organized a .pepper..party in Prague's Holešovice for our business partners, friendly brands, journalists, chefs, and influencers, who could experience Cambodia with all their senses. Ball by ball, .pepper..coin to .pepper..coin All the invited guests could get to know Kampot peppercorns up close, experience a real pepper farm, try sorting peppercorns, smell them, guess their colors, search for them, and collect them. Just like our farmers in Kampot. They collected the balls in the form of .pepper..coins – pepper money, which they then used to shop at our .pepper..market for goods from Kampot pepper bags to a new bottle of Žufánek. But they could also bargain like at a real Cambodian market! Take a walk with us through the whole evening, which started early in the morning. 9:00The schedule is clear, we start clearing out and rearranging the Holešovice Chapter. We are looking for space for 3 .pepper..bars and 7 .pepper..points with pepper activities. 10:00Flowers arrive.Florists from Lupen & pupen received a "simple" task – to turn the mobile stairs into a pepper field."It almost looks like Kampot.""Exactly like Kampot!" 11:00We cut, glue, and decorate.Lighting technicians arrive. Beautiful light is the foundation of every evening; the space is colored with beautiful tones of fuchsia and bright green around the farms and Cambodian stations. 12:00Pepper gifts arrive for guests. We start preparing the .pepper..market. 13:00"No way," Klára exclaims. "Kambodžanka Nien can’t come!"Our Cambodian friend was supposed to be at the .pepper..farm, the heart of the whole evening. She didn’t come due to family matters, but that’s just how it is in Cambodia. Family comes first.Battle meeting. 14:00A friend and our moderator for today, Jirka Hilgart, arrived. The .pepper..beer point from Pivovar PROUD is setting up a beautiful blue tap on an area of 2 × 4 meters. 15:00"That bar for Žufánek looks really good." The .pepper..bar for presenting the new limited edition takes our breath away.Pepper catering arrives. 16:00"So here we are!"The whole .pepper..team is on site and co-founder Klára explains to everyone how the whole evening will proceed. Each station is managed by one of our colleagues and the goal is clear:"Everyone must enjoy it. Including us!" 18:00"Welcome!" Our office manager Eliška welcomed guests at the guest list all night with her beautiful smile. The musical accompaniment was provided by our colleague Lukáš, whom you know from the customer service line. In his free time, he is a DJ, so the choice for the best .pepper..DJ was obvious! The space was filled with exotic tones of Asian beats, which enhanced the great atmosphere all night long. The .pepper..whee! wheel of fortune kept spinning as long as it could. Our new internal processes manager Marťa took it under her wing – visitors could spin to win, for example, the item „for a shot with David“ – the co-founder who devoted the whole evening (not just) at the bar to guests and partners. The greatest excitement was at the .pepper..sorting station for pepper sorting – everyone handled it excellently with both hands and sticks. This station was managed by our financial director Teddy, who supervised the sorting with the same precision as farmers in Cambodia. The .pepper..test station for recognizing pepper by smell was overseen by our graphic designer Tom, who was last in Cambodia in January and entertained everyone with travel stories. The quiz station .pepper..quiz was run by Šárka, whom you know from festivals, and who takes care of restaurants and the store. The questions were not only educational but also entertaining. You could learn everything about farming and weddings in Cambodia in a playful way! Our Lucka, who has been with us since the founding of .pepper..field and has been involved in events for several years, was at the cocktail .pepper..bar where we served our ready-to-drink pepper cocktails by Marcel Jinoch and Landcraft as a welcome drink. And in the whirl of the evening, you could also meet Aleš at the .pepper..market. It’s no coincidence that he was given the role of the entertainment department in .pepper..field marketing, which was responsible for this beautiful event! The fun began, lines formed, the night woven with conversations with interesting guests, which we streamed live on our Facebook and Instagram, passed incredibly fast. Many more people arrived than we expected and the atmosphere was great. We screened a pepper film from our farms, chatted with the host, and introduced each of the stations. Even those who seemed like they would just say hello, have a glass, and leave, eagerly collected .pepper..coins. At one point, there was a crowd at all the stations. And even when the food ran out, everyone stayed because they were playing, enthusiastically chatting and shouting to each other about all they had just learned. Among them was our new helper from the packing team, Tobiáš, who lent a helping hand at the bar and catering. Probably no one left empty-handed. And if someone did leave without a pepper gift, then at least with a good mood or a nice photo from our photo booths. Ladies could also get a .pepper..woman t-shirt, which was waiting for them to change into in the restrooms for free. This was so that there would be even more of us – members of the pepper family –. Thank you! It was beautiful, unforgettable, and lovely until the very end! You can find the aftermovie from the whole event here.

How to use fresh Kampot pepper in the kitchen?

This year's fresh harvest from Kampot pepper fields is here! We are most proud of our fresh peppers that received the highest award, 3 stars, at the GREAT TASTE 2023 – the so-called gastro Oscars. Fall in love with green salted, lyophilized, or fermented salty peppers just like the judges and cook with them comfortably and confidently at home, as if you were visiting a Michelin-starred restaurant. You already know how to handle dried peppers in a mill. Or you can remind yourself in some of our previous articles. But from today, you will become a professional chef because we will advise you on how to work with the category of fresh Kampot peppers. Because they are all soft, they could clog your mill mechanism. Therefore, use them whole, crushed in a mortar, chopped, or broken with the flat edge of a knife. Let's start boldly with green pepper in salt bloom This is the freshest form of Kampot pepper that we can deliver to your home from the pepper fields in Cambodia. Our farmers pick the stems and sort every single berry before they, so to speak, put them into a salt brine and vacuum-pack them. For pickling, we use Fleur de Sel – hand-harvested salt from the salt pans also located in Kampot province. You will hardly need any more salt when cooking. This pepper is perfect for pepper sauce. You only need to have butter, broth, and cream at home. Gourmets also add onion and garlic. And the pepper sauce is almost world-class. Green pepper hides within itself the beginning strength of the best pepper in the world, as well as notes of tea leaves, citrus, and sea minerals. It is delicate and tender, and when bitten into your mouth, it unleashes a perfect harmony of exotic flavors. The intense pepper flavor is gradually accompanied by tones of citrus and conifers mutually connected by floral notes. Try to combine its perfect taste with dark meat, sauces, risotto, or morning eggs. The soft green grains are also suitable for pasta, casseroles, and soups. They also go very well with mild cheeses, giving them a sharper accompaniment. Another flavor very close to green is lyophilized pepper with salt You can use it as is. Or you can drizzle it with olive oil. Since it is freeze-dried, it rehydrates upon contact with liquid to its original form, and you can work with it similarly to green pickled pepper. Dried, it creates a gastronomic delight in pasta, sauces, soups, and meat. If you like to experiment, don't hesitate to use it finely crushed in desserts. You wouldn't believe the flavor symphony it creates combined with panna cotta and forest fruits. Traditional cuisine advocates can crush it in a mortar or use it whole when working with dark meat, light meat, game, and also fish. It refreshes pasta, baked dishes with cheese and mushrooms, and also sauces. It deserves its place in autumn soups as well. Looking for a new pepper flavor? Then reach for fermented salted pepper It is no coincidence that we call it the king of cold cuisine or pepper caviar. Both because of its appearance and its flavor profile, which closely approaches umami – the so-called fifth taste. Fermented pepper hides a whole palette of flavors – from salty, through spicy, to pleasantly salty or slightly sour. You want to bite into this pepper because it doesn’t burn, but tastes perfect.  It finds its place in cold cuisine, as well as with side dishes and meat seasoning. Whether it’s about leafy salads, pasta, or potato salads, not just on holidays. Because it is soft to the bite, you can elevate homemade sandwiches and festive amuse-bouches – canapés for connoisseurs.  The king of cold cuisine’s power extends even further – from cheese platters with a glass of wine to seasoning finished steaks from the pan or grill. As a proper delicacy, it can also be eaten alone during evening movies instead of nuts or unhealthy chips. TIP: Try freeze-dried flakes of fermented Kampot pepper for convenient gourmets.

What makes Kampot pepper better?

Basically in everything. Similar to tomatoes from a garden compared to tomatoes from a supermarket. Anyone who still hasn't grasped the essence of the uniqueness of the peppercorns we import from the Kampot province in Cambodia may wonder what makes this pepper better than others. To understand why it is considered the best pepper in the world, we must go directly to the plantations of small Kampot farms, where pepper vines sprout from mineral-rich soil and peppercorns ripen under the beneficial rays of the local sun. White, black, green or red? All types of pepper are actually the fruits of a single plant, the black pepper vine. Similar to many other plants, the quality of the fruits is influenced by a variety of factors, with the most important being the environment in which the plant grows and the way it and its fruits are cared for. Just as French or Italian slopes are ideal for growing grapevines and thus these countries produce truly quality wines, Cambodia’s Kampot is also a suitable place for growing pepper. The pepper vines here grow from a substrate that has an ideal balance of sand, clays, and humus. The soil is rich in minerals, providing the root system of the vines with ideal nutrition for rapid growth and the production of truly high-quality peppercorns. Quality soil is only the foundation Kampot is a coastal region with a climate influenced by the nearby ocean. It is humid and genuinely warm. Sunlight hits the leaves and subsequently the ripening peppercorns with ideal intensity. The plants are neither burnt nor dried out, but their tissues are constantly warmed and the photosynthesis process runs at full capacity. The sun in the ripening fruits promotes the formation of characteristic substances such as fructose, piperine, and unique flavor and aromatic tones that contribute to the quality of the peppercorn. On top of all this, add centuries-old unchanged methods of cultivating pepper vines that local small farmers apply. No chemical sprays, no synthetic fertilizers, just pure nature and fertilization using guano, which is extremely nutritious bat droppings. Buy a tomato from a supermarket that has been bathed in chemicals from a young age and compare its taste to a tomato grown in your own garden. Exactly the same difference applies to Kampot pepper grown on small farms versus pepper from huge large-scale plantations where the vines are continuously supplemented with chemicals because they are grown in unsuitable environments and chemicals have favorable conditions to compensate. Last but not least, there is also the subsequent processing of the pepper. Our pepper undergoes strict selection. Poor or insufficiently large grains are discarded, so only the true top-quality grains end up in the bags. However, this cannot be said about the content of Package from mainstream brands, where besides dried peppercorns you can also find various impurities, twigs, and even encounter mold. This pepper is usually transported for several months in large bags on ships, where it becomes musty, loses the little quality it had, and molds. We vacuum pack our pepper immediately after harvesting and sorting and send it by air to Europe. Therefore, we can proudly and confidently say that our pepper is truly better than the pepper commonly available in supermarkets.

Original gift for men who are not afraid of novelties or cooking

Let's not kid ourselves, choosing the right gift can be quite a challenge, whether you know the person well or not. This is especially true for men. If you ask them what would make them happy, they usually answer that they already have everything and don't need anything. And if they don't get anything spectacular, they stare with surprise and considerable displeasure. They're basically sometimes a bit like little children. And that's a clue you should stick to. Children like to play, and in men, that playfulness usually stays until late age Therefore, it is good to give a gift they can experiment with, play with, and bring joy to the people around them. However, immediately forget about LEGO or slot car tracks. You might score points, but you could embarrass the man in front of others. For an original gift for men, you need to be clever. One of the few places where men shed their adult face and let the boy inside them speak is on the couch with a game console, in the workshop, or the kitchen. If you don't want to encourage their time in front of the TV or computer and you understand drills, it's ideal to move where you have solid ground under your feet. However, there is one catch here as well. An original gift for men for the kitchen should be purely masculine. A pot won't excite them, but a proper Japanese knife will. And a nicely sharp pepper grinder will bring similar joy. With us, you will find the best pepper in the world, imported all the way from Kampot, Cambodia, where pepper is grown using ancient methods and in a completely sustainable way. By purchasing this pepper, you will also support local farmers whose living standards differ significantly from ours due to exploitation. Your purchase will help send children to school, provide them with healthcare, and maybe even allow them to see parts of beautiful Cambodia beyond their home village. Kampot pepper is thus a completely original gift for men, especially if you add one of our excellent wooden grinders with refined grinding technology.

But what kind of original gift should you give a woman? The ideal gift for everyone If you think that such an original gift for a woman, meeting all these criteria, can hardly exist, you are mistaken. Kampot pepper fulfills every single one of them. It is an exclusive pepper grown in faraway Cambodia, where peppercorns ripen on pepper vines and are then harvested and dried in the same way as hundreds of years ago. We buy these peppercorns directly from small farmers, so we are sure that they receive fair payment for their work and can send their children to school or provide them with healthcare. The pepper they grow is of such quality in terms of taste that even top chefs awarded Michelin stars cook with it. Thanks to this, Kampot pepper can elevate the level of any cooked dish to a whole new level and make any cook a queen of the kitchen. Here with us, we also pack the pepper in packaging that emphasizes its absolute uniqueness. At the same time, we think about sustainability, so you give joy with the gift without burdening the planet in any way. And if you want to make a truly big impression, don't forget to add one of our grinders with a perfect grinding mechanism, which will look great in any kitchen. The original gift for a woman is already solved, now you just need to visit a florist and you are ready.

How to properly marinate meat so that everyone enjoys it?

Grilling meat is an art that requires knowledge of several basic tricks and procedures. Success is based on several factors, including not only the selection of the right meat but also its best possible marination. Let's imagine together the basic reasons and methods why and how to marinate before grilling itself. There are several reasons why you should marinate meat before grilling. Marinade adds flavor to the meat, makes it tender, and if you marinate properly, the marinade can also help speed up the preparation of the meat. Just four basic ingredients Every marinade should contain four basic ingredients. In oil, the meat rests nicely, does not stick to the hot grill grate, and absorbs part of its flavor. Another component should be a mild acidity, whether from lemon, yogurt, mustard, various types of vinegar, or juices. The acidity of the marinade helps tenderize the meat, so it falls apart in your mouth after cooking. Read our tips for perfect homemade marinades that you definitely shouldn't skip when grilling. - https://www.kampotskypepr.cz/news/dokonale-marinady-pro-letni-grilovani Of course, you should not forget salt, which not only enhances the flavor of the meat and added ingredients but also helps make the meat beautifully tender. And finally, always add a little pepper, preferably the best in the world directly from Kampot. Pepper highlights the flavor profile of the marinade and the marinated meat itself. How to marinate from A to Z What else you add to the marinade depends on your taste preferences and the type of meat being marinated. You can marinate chicken, fish, beef, or pork. Light meat goes wonderfully with herbs. Moreover, it doesn't need to be marinated too long; about an hour is enough. For dark meat, it's good to prepare it a day in advance, let it rest in the marinade in the fridge overnight, and before grilling, allow it to rest at room temperature for at least an hour. What meat will be the best choice for you?  Get inspired by our advice. Before grilling, it is good to take the meat out of the marinade and let the excess sauce drip off. It is definitely not necessary for the marinade to drip onto the hot coals and smoke. Also remove anything that might burn on the grill, from herbs to pieces of vegetables. Now your meat is perfectly prepared for grilling. Now you just need to prepare, for example, a perfect grilling sauce that will be the right accompaniment to perfectly grilled meat.

"Cheers!" – why do we sneeze after pepper?

Maybe it has also happened to you that you were crushing your favorite Kampot pepper into food when suddenly you felt a tickling in your nose and an uncontrollable urge to sneeze. Hopefully, you managed to quickly turn your head away, otherwise the salad might have been seasoned with something that was never originally planned. Why does pepper make us sneeze? The answer is piperine.  Piperine is what makes pepper peppery Piperine could be described as the soul of peppercorns. This alkaloid is precisely what causes its pungent taste, contributes to its aroma, and is also the reason for the many health benefits that pepper brings. Alkaloids, that is nitrogen-containing organic compounds of plant origin, can irritate the nerve endings inside the nose. As soon as the alkaloid hits the mucous membrane, it begins producing a chemical called histamine. And it is histamine that causes muscle contraction, which results in sneezing. What happens to our body? The body tries in this way to expel the substance that is irritating the mucous membrane. Piperine is contained in all the colored varieties of pepper. However, its highest concentration is in black pepper. It is interesting that during sneezing we can also observe a very strong flash in the eyes. This is the body's reaction to the high pressure in the head during sneezing. This pressure can also affect the retina, which is sensitive to light. So next time you work with pepper, be prepared for the imminent danger of sneezing. And also be prepared that it will be accompanied either by the wish "to your health" or the phrase: "It's true." While the first custom has its roots in the Middle Ages, when people wished each other strong health during plague pandemics, in the second case people already in antiquity took sneezing as confirmation of the truth of the statement preceding the sneeze. The divination from sneezes, which was practiced in ancient Rome, fortunately, has been lost to history. We can reinterpret that prophecy in our own way, for example: It is true that Kampot pepper is the best in the world. :-) Are you interested in what piperine does in your body? Read another article about its health benefits.

How to care for your hair and skin with the help of black pepper

We have shown you several times that pepper does not have to be just a spice in your kitchen to season steak or sauce. With this magical treasure from Kampot, you can conjure in various ways. And adding it to coffee or ice cream is just the beginning. Pepper also finds its use in cosmetics, where it works great in hair and skin care. Black pepper is rich in potassium, magnesium, iron, and also vitamins C and K Thanks to the presence of vitamin C, pepper is extremely rich in antioxidants and also has antibacterial and antibiotic effects. The oil obtained from black pepper can thus be used for skin treatment, as a prevention against wrinkles, and it also helps to remove pigmentation. Crushed black pepper can also be used as a peeling, helping for example with healing scars and acne spots Thanks to its antiseptic effects, it also aids overall healing and cleansing of the skin. However, it is important to remember that not every type of skin reacts well to pepper. Initially, approach its application on the skin with caution and combine it with carrier substances that you know your skin tolerates well. Take advantage of the beneficial black pepper also on the scalp and to strengthen your hair roots  Black pepper can help with the removal of dandruff, improve hair quality, and even support the growth of new hair. To increase the effect, you can also add a few citrus seeds to the mixture, which also help fight dandruff and refresh your scalp. Keep in mind that it is important to combine pepper with a carrier substance so that the pepper is not too concentrated – for example, with jojoba or apricot oil.
